Let It V are on their way to convince meat eaters with healthier alternatives

If you ask the Let it V team how to convince real meat fans to try plant-based alternatives, they will tell you about three unbeatable reasons. A passionate team of professionals and people who really love food crafts memorable plant-based meat products, aiming to sway consumers across the dietary spectrum with irresistible taste and texture. From vegan bacon to other meat alternatives, LET IT V's products promise an authentic culinary experience with every bite. We spoke with Jorge Osés Labadie, captain and co-founder, and asked him about three steps to success.

Can you explain the method behind LET IT V's ability to replicate the taste and texture of meat in your plant-based products?

We wanted to replicate the experience of traditional bacon made from pigs—right down to the taste and texture. To achieve this, we designed our plant-based bacon with three distinct layers, each contributing to an authentic flavor and texture.

The top layer, the skin, crisps up just like traditional bacon, providing that familiar crunch. The second layer, the fat, is where the rich umami flavor comes in, essential for capturing the true essence of bacon. Finally, the third layer combines the fat with a meat-like texture, delivering a smoky and savory bite. Together, these three layers create a multi-textured, flavorful experience that closely mimics the real thing.

But what sets our plant-based bacon apart is its health and environmental benefits. It uses 77% less water in production, contains 75% less fat and 60% fewer calories, while also being rich in iron and B12. Additionally, it is gluten and cholesterol-free, making it a healthier, more sustainable option without compromising on taste.

What makes your approach to creating plant-based meat alternatives unique compared to other companies in the industry?

In our view, taste is king. Our focus is on three pillars: taste, price, and sustainability. We're not just creating products for vegans, our real goal is to win over meat eaters. We aren’t in the business of making vegan meat substitutes—we’re here to create memorable and delicious food that everyone can enjoy, regardless of their dietary preferences. Our mission is to prove that plant-based options can meet, and even exceed, the taste expectations of traditional meat lovers while also being accessible and sustainable.

What are the main challenges faced by FoodTech startups?

We think the biggest challenge is price pairing. We also need to be able to raise awareness and for people to be able to try them. Once they try it, they love it!

How did the Desafia FoodTech program help you with your expansion plan?

We are very grateful to the Desafia FoodTech program for allowing us to explore one of the fastest-growing markets in Europe in the plant-based sector. For companies like ours, these programs are of great help in accelerating growth, allowing us to validate potential countries very quickly.

Why does LET IT V see potential in the German market?

We believe we share many similarities with the German market. Both cultures have a strong appreciation for pork-based products, especially charcuterie, and we are confident that we can adapt well to German preferences and taste.

Do you plan to create other plant-based products?

Yes! We already have some other products (vurgers, round meat, nuggets) but focusing on Veikon (vegan bacon) and with the goal of making the best Veikon in the world our next challenge and all our efforts will go on creating a Clean Label recipe while maintaining the original flavor and presentation.
